Berry Parfait with Cottage Cheese

For the Whipped Cottage Cheese
- 1 cup low-fat cottage cheese (1% or 2%)
- 1-2 tbsp honey or maple syrup
- 1/2 tsp vanilla extract
- Pinch of sea salt
For the Parfait
- 1 cup mixed fresh berries (strawberries, blueberries, raspberries, blackberries)
- 2 tbsp granola (optional)
- 1 tbsp sliced almonds or chopped walnuts
- Fresh mint leaves for garnish (optional)
Optional Add-Ins
- 1 tsp chia seeds (per serving)
- 1 tsp ground flaxseed (per serving)
- 1 tsp dark chocolate chips (per serving)
- Unsweetened coconut flakes
Whip the cottage cheese: Blend cottage cheese, honey, vanilla, and salt in a food processor for 1-2 minutes until completely smooth with no curds visible.
Prepare the berries: Hull and slice strawberries. Leave smaller berries whole. If berries aren't sweet, toss with 1/2 teaspoon honey.
Layer the parfaits: Divide half the whipped cottage cheese between two glasses. Add a layer of berries. Add remaining cottage cheese. Top with more berries.
Add toppings: Sprinkle granola and almonds over the top. Add optional toppings if desired.
Garnish and serve: Add fresh mint on top. Serve immediately or refrigerate for up to 2 hours.
