- 2 large English cucumbers (or 4 regular cucumbers)
- 6 oz light cream cheese, softened
- 2 tbsp fresh dill, chopped
- 1 tbsp fresh chives, chopped
- 1 clove garlic, minced
- 1/2 tsp lemon zest
- 1/4 tsp salt
- 1/8 tsp black pepper
- Everything bagel seasoning (optional)
- Cherry tomatoes, halved (optional)
Slice the cucumbers: Wash but don't peel. Slice into 1/4-inch thick rounds. You should get about 48 slices.
Make the herbed cream cheese: Mix softened cream cheese, dill, chives, garlic, lemon zest, salt, and pepper until well combined and fluffy.
Assemble: Spread or pipe about 1 teaspoon of herbed cream cheese onto each cucumber slice.
Garnish and serve: Sprinkle with everything bagel seasoning if desired. Top with cherry tomato pieces for color. Arrange on a platter.
