Cucumber Slices with Herbed Cream Cheese (GLP-1 Light Snack)

Ingredients
  

  • 2 large English cucumbers (or 4 regular cucumbers)
  • 6 oz light cream cheese, softened
  • 2 tbsp fresh dill, chopped
  • 1 tbsp fresh chives, chopped
  • 1 clove garlic, minced
  • 1/2 tsp lemon zest
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • Everything bagel seasoning (optional)
  • Cherry tomatoes, halved (optional)

Instructions
 

  • Slice the cucumbers: Wash but don't peel. Slice into 1/4-inch thick rounds. You should get about 48 slices.
  • Make the herbed cream cheese: Mix softened cream cheese, dill, chives, garlic, lemon zest, salt, and pepper until well combined and fluffy.
  • Assemble: Spread or pipe about 1 teaspoon of herbed cream cheese onto each cucumber slice.
  • Garnish and serve: Sprinkle with everything bagel seasoning if desired. Top with cherry tomato pieces for color. Arrange on a platter.
  • Serve fresh: Best served within 2 hours. Cucumbers release water over time.
