Dark Chocolate Cottage Cheese Mousse

Ingredients
  

For the Mousse

  • 1.5 cups cottage cheese (low-fat or 2%)
  • 3 tbsp unsweetened cocoa powder
  • 3 tbsp honey or maple syrup
  • 1 tsp vanilla extract
  • 2 tbsp dark chocolate chips, melted (optional)
  • Pinch of sea salt

For Topping (Optional)

  • 2 tbsp dark chocolate shavings
  • Fresh raspberries
  • Whipped cream
  • Crushed almonds

Instructions
 

  • Prep your ingredients: Make sure your cottage cheese is cold from the fridge. Cold ingredients blend better and create a thicker mousse. If using melted chocolate chips, melt them in the microwave in 15-second intervals, stirring between each, until smooth. Set aside to cool slightly.
  • Blend until completely smooth: Add cottage cheese, cocoa powder, honey, vanilla extract, and salt to a high-speed blender or food processor. Blend on high for 60-90 seconds, stopping to scrape down the sides once or twice. You want zero lumps. The mixture should look silky and smooth, like actual mousse.
  • Add melted chocolate if using: If you're using melted chocolate chips for extra richness, add them now and blend for another 15-20 seconds until fully incorporated. This step is optional but makes it taste more indulgent.
  • Taste and adjust: Give it a taste. Want it sweeter? Add another tablespoon of honey and blend briefly. Want more intense chocolate flavor? Add another teaspoon of cocoa powder. This is your mousse, make it work for you.
  • Divide into serving cups: Spoon or pipe the mousse into four small cups, ramekins, or glass jars. I use 4-ounce mason jars because they're perfect for portion control and have lids for easy storage.
  • Chill to set: Cover and refrigerate for at least 1 hour. The mousse firms up as it chills and the flavors develop. It's edible right away, but better after chilling.
  • Add toppings before serving: Top with chocolate shavings, a few raspberries, a small dollop of whipped cream, or crushed almonds right before eating. Or eat it plain. Both ways are excellent.
